Medhu Vada Ingredients::
Urad Dhal - 250g
Green Chillies -3
Asafetida - a pinch
Curry leaves - few
Coriander leaves - few
Ginger - half inch
salt - to taste
Oil - 2 cups
Cumin Seeds - half tablespoon
Medhu Vada Preparation:
1. Soak the urad dhal for 1 hour with enough water to soak
2. First grind the chillies, cumin seeds, salt, curry leaves, asafeotida, ginger and salt. After grinding this, add the urad dhal and grind until soft and fluffy
3. Don't add excess water, it will cause more absorption of oil
4. Add chopped coriander leaves (optional) and mix well
5. Heat the oil in a pan for frying
6. Mean while, take small portions of batter like a ball. Flatten the balls and put it in the hot oil one by one. If necessary have abowl of water beside to wash your hands, so that the batter will not stick to your hands
7. Allow it to fry in low flame. Carefully turn the vadai when it becomes golden colour at the bottom
8. Remove from oil when it gets fried on both sides
9. Medhu Vadai is ready to serve now. Serve with sambar and coconut chutney. Or serve with curd garnishing with coriander leaves
