這das Schnitzel跟Cordon Bleu外貌幾乎一樣喔~ 不同的只是內容: 瑞士正宗的Cordon Bleu做法是, 用小牛肉片夾硬乳酪片及ham, 沾蛋汁 夥麵包屑油炸而成. 炸好上桌馬上食用... ( 比較便宜實惠的做法是用豬肉排或雞排替代. 小牛肉滑嫩但貴很多, 除了瑞法兩國, 其他地方很不易買到. )

Bastille Day France Recipe on Chicken Cordon Bleu
On the 14th of July, which is Bastille Day, some ordinary citizens overtook the power of the Bastille prison in 1789. One day there was a two storming of the Bastille on July 16th, 1789. Bastille’s King named the colors of the France flag on that day. The colors of the flag are blue, red, and white. They stand for liberty, equality, and fraternity. Bastille Day is a very special festive day for France.
Ingredients
6 skinless, boneless chicken breasts halves
6 slices Swiss cheese
6 slices ham
3 tablespoons all-purpose flour
6 tablespoons butter
½ cup dry white wine
1 teaspoon chicken bouillon
1 tablespoon cornstarch
1 cup heavy whipping cream
Directions
1. Pound chicken breasts if they are too thick. Place a cheese and ham slice on each breast within ½ inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Coat the chicken pieces with flour.
2. Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.
3. Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring until thickened, and pour over the chicken. Serve warm.

CORDON BLEU
Makes 6 servings.
2 pounds beef fillets
6 1/2 ounce slices cooked ham
6 1/2 ounce slices Swiss cheese
1 teaspoon grated orange rind
1/4 teaspoon white pepper
1 egg beaten
1/4 cup bread crumbs
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup milk
1/4 cup Parmesan cheese
Place 1 slice each of ham and cheese in the center of each fillet. Cut to fit.
Sprinkle orange rind and pepper evenly over each fillet.
Roll the fillets and secure with wooden picks.
Gently dip rolls in beaten egg, then coat with bread crumbs. P
lace in a 12-inch x 8-inch x 2-inch baking dish.
Melt butter in sauce pan over medium-heat; blend in flour.
Slowly stir in milk and cook until thickened.
Pour sauce over dish and top with Parmesan cheese.
Bake at 350 degrees F for 20 minutes or until dish flakes easily.
