新加坡 - 重返 Raffles (下)

上篇略述重返新加坡 Raffles Hotel 整體觀感,本篇記述一些飲食。

今昔俱佳 - Breakfast at Raffles

早餐時來作伴的蜜蜂

旅途中反而較有機會享受早餐,Raffles 豐盛美味的早餐幾乎成了個人選擇入住的原因之一。最喜歡的菜色是台灣幾乎找不到的 Eggs Benedict(請見此篇),無論傳統式或搭配燻鮭魚做法,Raffles 都做得極好。這裡吃早餐可不需預先勾選、掛在門外,也不需考慮供應至幾點鐘止,總之想吃便叫、二十分鐘內就有辦法熱騰騰送達。

無論住樓上、樓下,面對樹影扶疏的中央院子(Court Yard)還是綠草如茵的棕櫚院(Palm Court),最喜歡坐在房前長廊享受早餐。啜咖啡、閱報紙,悠悠閒閒吃個 "Slow & Long Breakfast"。真的有時間暫停流逝之錯覺。

此行仍是朝朝如此,傳統式豪華版(加松露、襯鮭魚)都享受到。一向喜歡以 Corned Beef & Hash 碎鹹牛肉與煎薯泥做為早餐 Side-dish 搭配,雖然未列於 Raffles 菜單上,點了一樣有、隨餐準時送上。

另雖然前幾日也曾在 Shangri-La Hotel 氣氛甚佳的 Summit Room 享用不錯的 Eggs Benedict,但仍遜於 Raffles 一籌。

始終無緣 - Raffles Grill

細數一下,Raffles 餐廳加酒吧竟達十三家,與 103 間房當然不成比例,顯然越來越倚賴餐廳帶入營收。過去習慣,較少在所居旅館用餐(早餐除外),但是喝飲料的機會多,所以 《Writers Bar》、《Long Bar》、《Bar & Billiard Room》 等酒吧多曾光顧。有名的主西餐廳Raffles Grill一直緣慳一嚐,在其由知名的 Jacques & Laurent Pourcell 管理時也未造訪。此次已換成澳洲新星 Justin North 掌廚,筆者入住時恰巧世界名廚 Alain Ducasse 也「駕到」、主要便是頒一獎項給 North,同時宣佈考慮將於新加坡開設(SPOON)餐廳(隔日池畔見一西方胖子也在曬太陽,同伴說就是 Ducasse)。請服務員訂位,結果正逢週日不營業,於是仍未嚐到 Raffles Grill。

只有氣氛 - Empire Cafe

Empire Cafe 與 《Ah-Teng's Bakery》(阿鄧麵包?)開在一起,主要供應新加坡當地吃食,肉骨茶、喇沙麵、炒粿條(貴刁)等不少種類。東西沒什麼特別,所點(潮式)肉骨茶湯平淡、排骨乾瘦、配飯甚硬,只有油條沾蘸老抽還不錯。同伴至麵包西點區購返之蛋撻還比較好吃。肉骨茶自然不如小店《黃亞細》,想起 Shangri-La 酒店有水準的炒粿條看來也比此處像樣。店內只有 1920 年代懷舊裝潢令筆者欣賞,飲食則普通。

琳瑯滿目 - THOS

整個 Raffles Arcade 購物廊只有此店最令個人感興趣,由手工製巧克力、餅乾、糖果到自身標籤的 Beluga 魚子醬、鵝肝、咖啡、茶葉,加上各色美酒佳釀、餐具、廚房小用具,五花八門。又是一個可以逛許久的店。以 THOS 這麼一家開在 Raffles 內的高級食材店來看,新加坡葡萄酒價並不貴。不過各種印上了旅館大小 logo 的各色食品可就不便宜了。

Ikura & Hollandaise

Yup. Nami is still quite good, very close too, which I appreciate. (I work at Front/Yonge). Ematei is a bit out of the way but I should give it a try sometime.

I often go to Kumai, not sure if it was around when you were in Canada. It is frequented mostly by Japanese people, and run by Japanese people. (As you know, most Japanese restaurants in Canada are actually run by people from HK/Taiwan/Korea)

As for Hollandaise sauce, I gotta warn you... don't have it too often! Anthony Bourdain talked about it in his behind the scenes book Kitchen Confidential. Since Hollandaise has to be stored at room temperature, it's basically a cesspool for bacteria. Of course, if you can find a place that makes the Hollandaise on order, then you should be fine. Unfortunately, most places pre-make their Hollandaise sauce...jsut the thought of it sitting there scares me. Be Careful!!!!

鮭魚與松露中間的那團是... Poached Egg

Eggs Benedict 的靈魂:軟硬適中、蛋黃半熟的 Poached Egg 與做得正確的 Hollandaise Sauce 醬汁。

最難掌握:製作有些繁複的醬汁卻只能現做現(約 20 分鐘內)用。

所以沒有兩把刷子的西式早餐師傅不敢做、餐廳不敢列入菜單。就只有弄兩個 Sunnyside Up(最易)、Over-&-easy(易)蛋算啦...

是的,加拿大鮭魚卵、海膽都輸日本去啦,當地要吃反而得「逆輸入」。

Toronto 現在都到哪裡吃日本菜?以前是去 "Nami", "Ematei", "Ichiriki",都是 downtown,與台北、亞洲比是差一截。不如去 "Rodney's" 吃些生蠔倒是比台北強。

人家中午有吃飽說 ~ 怎麼看這些文圖還在吞口水.....ㄞ....真不想河馬穿高跟鞋...
但倒是提醒我該補冰箱中鵝干醬的貨了.  多 J ~

Speaking of caviar... got a little rant here....

Even though Canada is the biggest salmon producer in the world... the ikura quality here is HORRIBLE.... (you probably know this too). It's like, all the ikura here are 外銷轉內銷, reimported back, can't find anything fresh at all. Even at the nicer Japanese restaurants, the ikura is still inferior to the stuff you find even at places like 爭鮮 in Taiwan. (Yes, it's THAT bad).

The only acceptable ones I have found are the ones directly from fish mongers  at the St. Lawrence market.  Sometimes it almost makes me want to buy a whole salmon myself... hahaha

I am a simple man who is easily satisfied. 鮪魚蔥泥 + ikura 拌飯...nothing fansy!!! Not asking for much...hahaha

As for sturgeon caviar, I am actually a little concerned here. I have been reading a lot about reports about overfishing and pollution in the producing area, drastically cutting the yield. I really hope that the supply is still there when I can finally afford it!

Starberry: Quite true. Then again, larger cities aren't Caviar-producers(nor even belong to Caviar-producing countries) also offer fine Caviars. I guess it's simply a matter of supply & demand.

Reich: 是指好吃的 Eggs Benedict 嗎?那便是「可求不可遇」啦(求老婆做、街上遇不到)

Just a bit curious as to why people would want to buy their caviar in Singapore....hahahahahaha

Maybe it's for lazy shoppers or people who are busy and don't have time to leave the hotel and shop for local gifts.

However, picture this. Say someone goes to Singapore and tells you they brought back a gift for you. Then they show you the caviar.... sure you would be delighted and appreciate it, but wouldn't it be a bit wierd?
